Recipe Sicilian Lemon sensational sundae

Ingredients
- 1kg Macphie Lemon Sensation®
- 350g water
- 250g oil
- Macphie o.t.t® Sicilian Lemon dessert topping
- Italian meringue
- Crushed digestive biscuits
- 500ml Macphie Mactop® Traditional
- 250g cream cheese
- Vanilla

Method
Place Macphie Lemon Sensation®, water & oil in a mixing bowl fitted with a beater. Mix on slow speed for 1 minute, scrape down. Then mix for further 4 minutes on medium speed.
Pour batter into lined tray and bake at 180°C for 40 – 45 minutes, Once cooled cube.
Place the cream cheese, Macphie Mactop® Traditional and vanilla into a mixing bowl with a whisk. Whisk until thickened.
Build the sundae with layers of Macphie Lemon Sensation®, the Macphie Mactop® Traditional cream cheese mix, Macphie o.t.t® Sicilian Lemon dessert topping and crushed digestive biscuits.
Top with Italian meringue and some digestive biscuits, lightly torch the meringue and serve.
