Method

  1. Chill the Macphie Mactop® Traditional to 2-10°C and fill approximately 1/3rd of bowl before whipping.

  2. Whip until soft peak consistency is achieved.

  3. Deep fry the bao buns at 170°C until golden brown. Allow to cool slightly and toss in sugar.

  4. Pipe in the Macphie Mactop® Traditional until full and smoothed off

  5. Once full place in the marshmallow and sprinkle the biscuit crumb, Blow torch the marshmallow until caramelized.

  6. Finish with a heavy drizzle of o.t.t® PLUS Milk Chocolate dessert topping.
