Ingredients

  • 1 litre Macphie Hollandaise Sauce
  • 10oz thick cut sirloin steak
  • 2 baked baguettes
  • Skin on fries
  • 50g chopped fresh tarragon
  • 2 diced shallots
  • 10 black peppercorns
  • 1 bay leaf
  • 200ml white wine vinegar
  • 200ml white wine
  • Dipping gravy
  • Salt to taste

Method

  1. Mix the white wine and white wine vinegar in a saucepan with the shallots, peppercorns, bay leaf and the stalks from the tarragon. Put on a medium heat and reduce by 2/3.

  2. Mix a tablespoon of the sauce at a time to the Macphie Hollandaise Sauce to taste and season with salt and add the chopped tarragon.

  3. Season your steak well and cook in a very hot pan to your liking. Rest well and slice.

  4. Assemble your baguettes and drizzle generously with the Bearnaise sauce.

  5. Serve with dipping gravy.
