Ingredients
- 325g Macphie Superdough
- 1kg strong bread flour
- 75g yeast
- 500g water
- 100g milk
- 150g ground almonds
- 50g light brown sugar
- 12g cocoa powder
- Zest and juice of half a large orange

Method
Add the bread flour, Macphie Superdough, yeast and water into a conventional mixer. Mix on middle speed for 15-20 minutes or in a spiral mixer for 3 minutes on slow speed and 8-10 minutes until dough is formed.
Weigh the dough into 600g pieces.
Make a mix by heating the milk, add in the ground almonds, light brown sugar and cocoa powder. Cook on a medium heat for 2-4 minutes. Add in the orange zest and juice and allow to cool fully.
Roll out the bread and spread generously with the mix, a few mm in thickness.
Roll the dough up and cut in half length ways. Twist to the two together and place into a lined baking tin.
Prove until twice its size.
Bake at 200°C for 40-45 minutes until fully baked.
