Ingredients

  • 325g Macphie Superdough
  • 1kg strong bread flour
  • 75g yeast
  • 500g water
  • 100g milk
  • 150g ground almonds
  • 50g light brown sugar
  • 12g cocoa powder
  • Zest and juice of half a large orange

Method

  1. Add the bread flour, Macphie Superdough, yeast and water into a conventional mixer. Mix on middle speed for 15-20 minutes or in a spiral mixer for 3 minutes on slow speed and 8-10 minutes until dough is formed.

  2. Weigh the dough into 600g pieces.

  3. Make a mix by heating the milk, add in the ground almonds, light brown sugar and cocoa powder.  Cook on a medium heat for 2-4 minutes. Add in the orange zest and juice and allow to cool fully.

  4. Roll out the bread and spread generously with the mix, a few mm in thickness. 

  5. Roll the dough up and cut in half length ways. Twist to the two together and place into a lined baking tin. 

  6. Prove until twice its size.

  7. Bake at 200°C for 40-45 minutes until fully baked.
