Ingredients

  • 1 tuna steak
  • 100g diced mango
  • 1 red chilli sliced
  • 10g mint leaves
  • 10g coriander leaves
  • 1 carrot
  • 20g pickled red onions
  • 50g sliced cucumber
  • 100g mixed leaves
  • 150ml Macphie ku-li® Mango fruit coulis
  • 1 red chilli
  • 3 tbsp olive oil
  • 1 lime (juice)
  • 1 tbsp soy sauce
  • 1 tbsp fish sauce

Method

  1. In a suitable mixing bowl mix together the Macphie ku-li® Mango fruit coulis, finely chopped red chilli, olive oil, lime juice, soy sauce and fish sauce for the dressing.

  2. Place a griddle pan over a high heat, leave to get hot. Rub the tuna steak with a little oil and place into the very hot pan.

  3. Sear each side for 45 – 60 seconds, ensuring each side is browned. Remove from the pan allow to rest for 2 mins.

  4. Whilst resting mix the diced mango, red chilli, mint, coriander, grated carrot, pickled red onions sliced cucumber and mixed leaves in a large bowl with ¾ of the dressing.

  5. Arrange in a serving dish, carve the tuna steak place on top and finish with more dressing.
