Recipe Thai inspired mango salad
Ingredients
- 1 tuna steak
- 100g diced mango
- 1 red chilli sliced
- 10g mint leaves
- 10g coriander leaves
- 1 carrot
- 20g pickled red onions
- 50g sliced cucumber
- 100g mixed leaves
- 150ml Macphie ku-li® Mango fruit coulis
- 1 red chilli
- 3 tbsp olive oil
- 1 lime (juice)
- 1 tbsp soy sauce
- 1 tbsp fish sauce
Method
In a suitable mixing bowl mix together the Macphie ku-li® Mango fruit coulis, finely chopped red chilli, olive oil, lime juice, soy sauce and fish sauce for the dressing.
Place a griddle pan over a high heat, leave to get hot. Rub the tuna steak with a little oil and place into the very hot pan.
Sear each side for 45 – 60 seconds, ensuring each side is browned. Remove from the pan allow to rest for 2 mins.
Whilst resting mix the diced mango, red chilli, mint, coriander, grated carrot, pickled red onions sliced cucumber and mixed leaves in a large bowl with ¾ of the dressing.
Arrange in a serving dish, carve the tuna steak place on top and finish with more dressing.
