Recipe The Bruce cake

Ingredients
- 2kg Macphie Chocolate Crème Cake Mix
- Macphie Chocolate Frosting
- 500g Macphie GlenDelight®
- 700g whole egg
- 600g vegetable oil
- 400g water
- 500g dark chocolate

Method
Add the Macphie Chocolate Crème Cake Mix and whole egg to a mixing bowl fitted with a paddle and mix on medium speed for 3 minutes. Then add in the oil and water and mix for further 3 minutes on slow speed.
Prepare 4 x 8″ round cake tins by lining with baking parchment.
Place 925g of mix into each cake tin.
Bake at 160⁰C for 40-45 minutes.
Once cooled divide each cake into 3 layers. Sandwich each layer with Macphie Chocolate Frosting.
Bring Macphie GlenDelight® to the boil, take off the heat and add the dark chocolate, mix until all the chocolate has melted.
Let the chocolate ganache cool slightly then pour over the layer cake and leave to set.
