Ingredients

  • 250g Macphie Plant-based White Sauce
  • 1000g roasted root veg cut into 1inch pieces
  • 80g sun ripened tomatoes
  • 100g courgette ribbons
  • 10g crushed garlic

Method

Makes 5 portions

In a bowl, combine the Macphie Plant-based White Sauce and the garlic and mix well

Add the hot roasted vegetables and tomatoes to the sauce

Place approximately 200g of the mixture into a ring mould on the plate and pack down lightly

Add the courgette ribbons on top then remove the mould
