Method

  1. Dip the sponge fingers in the coffee/ Tia maria mix and place into a square tin.

  2. Put the Macphie Mactop® Traditional, mascarpone and cream cheese in a large bowl.

  3. Whisk until the Macphie Mactop® Traditional, mascarpone and cream cheese have completely combined and have the consistency of thick whipped cream.

  4. Place a layer of the Macphie Mactop® Traditional mix onto of the sponge fingers.

  5. Add another layer of sponge fingers and pipe the rest of the Macphie Mactop® Traditional mix onto the final layer.

  6. Dust with Matcha powder to finish.
