Recipe Vegan lemon & elderflower summer loaf
Ingredients
- 1000g Macphie Mississippi Muffin & Cake Mix
- 235g vegetable oil
- 425g water
- Macphie Sweet Snow®
- Elderflower flavouring
- Macphie 5th Avenue® White Icing
- Lemon juice and rind
- Selection of berries
Method
Mix the Macphie Mississippi Muffin & Cake Mix and liquids on slow speed for 1 minute, scrape down then mix on middle speed for 6 minutes.
Deposit batter into loaf cake tin (400g).
Bake at 360 °F (180 °C) for 40-45 minutes.
Allow to cool then top with Macphie 5th Avenue® White Icing thinned with a simple syrup, lemon juice and grated rind for texture.
Decorate with fresh berries and a dusting of Macphie Sweet Snow®.
