Method

  1. Place the water, whole egg and any fat being added into the machine bowl.

  2. Add the sieved and blended Macphie Mac-a-Cake, cake flour and caster sugar.

  3. Whisk on slow speed for 1 minute. Scrape down.

  4. Whisk on top speed for 8 minutes.

  5. Always finish by whisking for one minute on slow speed.

  6. Deposit 250g in to lined 6″ Cake tins.

  7. Bake 190-200°C for about 25 mins.

  8. Turn out to cool once baked.

  9. Whip chilled Macphie Mactop® Traditional, using a balloon whisk.

  10. Once cooled, Layer the sponges with jam and pipe on some Macphie Mactop® Traditional.

  11. Top with fresh berries and sieve Macphie Sweet Snow® over the entire cake.
