Recipe Victoria sponge
Ingredients
- Macphie Mactop® Traditional
- Macphie Sweet Snow®
- 100g Macphie Mac-a-Cake
- Jam
- Berries
- 250g cake flour
- 350g caster sugar
- 340g whole egg
- 140g water
Method
Place the water, whole egg and any fat being added into the machine bowl.
Add the sieved and blended Macphie Mac-a-Cake, cake flour and caster sugar.
Whisk on slow speed for 1 minute. Scrape down.
Whisk on top speed for 8 minutes.
Always finish by whisking for one minute on slow speed.
Deposit 250g in to lined 6″ Cake tins.
Bake 190-200°C for about 25 mins.
Turn out to cool once baked.
Whip chilled Macphie Mactop® Traditional, using a balloon whisk.
Once cooled, Layer the sponges with jam and pipe on some Macphie Mactop® Traditional.
Top with fresh berries and sieve Macphie Sweet Snow® over the entire cake.
