Victoria Sponge

Method Makes 6 280g sponges 

  1. Place Macphie Sponge Mix into a machine bowl fitted with a whisk along with the softened butter/cake margarine & water.

  2. Whisk on slow speed for 1 minute, scrape down.

  3. Whisk on medium speed for approx. 8 minutes, with a final mix on slow speed.

  4. Deposit approx. 280g into a greased 6″ sponge tin.

  5. Bake for approx. 25-30 minutes at 180°C.

  6. Once cool either cut in half or use 2 sponges and spread a layer of o.t.t® Strawberry dessert topping or jam onto the bottom & then pipe whipped Macphie Mactop Traditional® onto the o.t.t® Strawberry dessert topping or jam and place the other half of the sponge on top.

  7. Dust with a layer of Macphie Sweet Snow®.  

  8. Decorate with raspberries.
