Recipe Viennese rainbow sandwich

Ingredients
- 1kg Macphie Viennese Mix
- 500g butter or margarine
- Macphie Reduced Sugar Vanilla Frosting
- Food colourings
- Macphie Sweet Snow®

Method Makes 10-12 biscuits
Place Macphie Viennese Mix into a machine bowl fitted with a paddle, add the softened butter and mix on slow speed until fat is dispersed. Mix on medium speed for 5 minutes.
Put the mix in a large piping bag with a star nozzle.
Pipe in rounds on a silicone baking mat.
Bake for 15 mins at 190⁰C until lightly coloured. Leave to cool on a wire rack.
Mix Macphie Reduced Sugar Vanilla Frosting with food colouring of your choice.
Fill each biscuit with coloured frosting and dust with Macphie Sweet Snow®.
