Ingredients
- 1kg Macphie Madeira Cake Mix
- 145g cake margarine
- 400g water
- Macphie Vanilla Frosting
- Red colour
- Peach colour
- Black pin ice
Method
Place the Madeira Cake Mix & margarine into a machine bowl fitted with a paddle, mix for 1 minute on slow speed,
Add water and mix for 1 minute on slow speed, scrape down. Mix for a further 4 minutes on middle speed. Mix for a final minute on slow speed.
Deposit 35g into lined paper cases and bake at 180°C for 25-30 mins.
Once cupcakes are cool, pipe large swirls on top of 12 cupcakes with Macphie Rainbow Frosting Vanilla.
Blend Macphie Vanilla Frosting with colours to make up (pipe red frosting onto 6 cupcakes to make the hat and peach onto 5 for the face).
Arrange into Santa formation and cut out circles from black pin ice for eyes and pipe on a small white bulb for pupils.
