Recipe Brex-mex hash
Ingredients
- Macphie Nacho Cheese Sauce
- Cooked diced potato
- Olive oil
- Diced red onion
- Diced chorizo
- Diced green pepper
- Finley diced chilli
- Crushed tortilla chips
- Sliced spring onion
- Picked coriander
Method
In a large frying pan on a medium heat, cook the diced chorizo until it starts to caramelise.
Add the diced potato and continue to cook until they start to brown.
Drizzle a little olive oil into the pan followed by the red onions, peppers and chilli.
Cook for 3-4 mins until the peppers start to soften, season with salt and pepper and spoon the hash mix into serving dishes/containers.
Heat up the Macphie Nacho Cheese Sauce and pour over the hash mix along with crushed tortillas.
Top with spring onions and coriander.
