Recipe Eggs Benedict

Ingredients
- 100g Macphie Hollandaise Sauce
- 1 English muffin
- 1 egg
- Handful of spinach

Method Makes 1 portion
- Heat Macphie Hollandaise Sauce in pan and remove from heat just before boiling point.
- Half and toast the muffin.
- Poach the egg.
- Wilt the spinach in a pan with warm oil.
- Assemble muffin, spinach and egg on muffin.
- Pour over Macphie Hollandaise Sauce, sprinkle with cayenne pepper and flash under grill.
