Method

  1. Toast the mini tortilla wraps and allow to crisp.

  2. Heat the Macphie Plant-based Taco Sauce.

  3. Heat the refired beans.

  4. Slice the radishes and place in a container under a damp cloth.

  5. Slice the spring onions and place in a container under a damp cloth.

  6. Shallow fry the eggs in a large saucepan with some vegetable oil.

  7. Spread the warm Macphie Plant-based Taco Sauce on the crisp tortilla wrap.

  8. Cover generously with some of the warm refried beans.

  9. Drain and add the fried egg.

  10. Garnish with sliced radishes and dress with harissa sauce.

  11. Garnish with sliced spring onions and picked coriander.
