Recipe Lamb piddies
Ingredients
- 200g Macphie Softie®
- Macphie Plant-based Taco Sauce
- Macphie GlenGlaze®
- 2000g Bread Flour
- 1200g Water
- 60g Yeast
- Lamb mince
- Chopped fresh tomatoes
- Smoked paprika
- Cinnamon
- Cumin
- Ground coriander
- Salt & Pepper
- Nigella seeds
- Fresh mint
Method
Place Macphie Softie®, flour, yeast and water into a spiral mixer and mix until the dough is developed.
Scale the dough pieces off at 130g. Ball up and rest for 5 minutes.
Pin out into an oval shape, fold over the edges and secure down.
Glaze edges with Macphie GlenGlaze®.
Mix all the the rest of the ingredients together (except the Macphie Plant-based Taco Sauce and Mint) before spooning into the Piddies.
Prove for 35-40 minutes at 38°C and bake for 15 minutes.
Drizzle with warmed Macphie Plant-based Taco Sauce and garnish with mint.
