1. Place Macphie Softie®, flour, yeast and water into a spiral mixer and mix until the dough is developed.

  2. Scale the dough pieces off at 130g. Ball up and rest for 5 minutes.

  3. Pin out into an oval shape, fold over the edges and secure down.

  4. Glaze edges with Macphie GlenGlaze®.

  5. Mix all the the rest of the ingredients together (except the Macphie Plant-based Taco Sauce and Mint) before spooning into the Piddies.

  6. Prove for 35-40 minutes at 38°C and bake for 15 minutes.

  7. Drizzle with warmed Macphie Plant-based Taco Sauce and garnish with mint.
