Method

  1. Place the Macphie Mississippi Muffin & Cake Mix into a mixing bowl fitted with a paddle and beat on slow speed whilst gradually adding 425g water and 235g vegetable oil for 1 minute, scrape down.

  2. Place the Macphie Mississippi Chocolate Muffin & Cake Mix into a mixing bowl fitted with a paddle and beat on slow speed whilst gradually adding 435g water and 250g vegetable oil for 1 minute, scrape down.

  3. Mix on middle speed for 6 minutes and blend in any inclusions on slow speed for a final minute.

  4. Deposit at 25g into small paper cases.

  5. Bake for 15-18 minutes at 190°C.

  6. Once cool top with Macphie Chocolate Frosting and Vanilla Frosting.

  7. Finish off with various toppings.
