Recipe Mini lemon loaf cakes

Ingredients
- 1kg Macphie Lemon Sensation®
- 350g water
- 250g vegetable oil
- Macphie Shortbread Mix
- Macphie Flapjack Mix
- Butter

Method Makes 16 cakes
- Place Macphie Lemon Sensation®, water & vegetable oil into a machine bowl fitted with a beater and mix for 1 minute on slow speed, scrape down.
- Mix for 4 minutes on medium speed.
- Deposit 100g into mini loaf cake cases and top with streusel topping. This is made by combining the Flapjack Mix and Shortbread Mix together with some butter.
- Bake for 35-40 minutes at 180°C.
