Recipe Mini lemon loaf cakes

Ingredients
- 1kg Macphie Lemon Sensation®
- 350g water
- 250g vegetable oil
- Macphie Shortbread Mix
- Macphie Flapjack Mix
- Butter

Method Makes 16 cakes
Place Macphie Lemon Sensation®, water & vegetable oil into a machine bowl fitted with a beater and mix for 1 minute on slow speed, scrape down.
Mix for 4 minutes on medium speed.
Deposit 100g into mini loaf cake cases and top with streusel topping. This is made by combining the Flapjack Mix and Shortbread Mix together with some butter.
Bake for 35-40 minutes at 180°C.
