Method Makes 2 cakes

  1. Place Macphie Superdough, flour, yeast and water into a spiral mixer and mix for 3 minutes on slow speed and 6 minutes on fast speed.
  2. Add the butter and clear.
  3. Allow the dough to rest for approx. 1 hour.
  4. Knock back and add the raisins and peel.
  5. Weigh off at 1kg for a large panettone.
  6. Place into round baking tins or panettone cases and prove for 45-50 minutes 38°C/90% relative humidity.
  7. Bake for 25-30 minutes at 218°C.
