1. Place Macphie Softie®, yeast, flour & water into a spiral mixer and mix until the dough is developed.

  2. Scale dough piece off at 130g. Ball up and rest for 5 minutes.

  3. Pin out into an oval shape, fold over the edges and secure down.

  4. Glaze edges with Macphie Glenglaze®.

  5. Mix together the Macphie Béchamel with Butter Sauce, spinach and ricotta, and spoon into the Piddies.

  6. Prove for 35-40 minutes at 38°C and bake for 15 minutes.
