Recipe Spinach & ricotta piddies
Ingredients
- 200g Macphie Softie®
- Macphie Béchamel with Butter Sauce
- Macphie GlenGlaze®
- 2000g Bread Flour
- 60g Yeast
- 1200g water
- Ricotta
- Spinach
Method
Place Macphie Softie®, yeast, flour & water into a spiral mixer and mix until the dough is developed.
Scale dough piece off at 130g. Ball up and rest for 5 minutes.
Pin out into an oval shape, fold over the edges and secure down.
Glaze edges with Macphie Glenglaze®.
Mix together the Macphie Béchamel with Butter Sauce, spinach and ricotta, and spoon into the Piddies.
Prove for 35-40 minutes at 38°C and bake for 15 minutes.
