Spinach
swirls

Ingredients
- 200g Macphie Softie®
- OR 250g Sofrol
- 2000g bread flour
- 60g bakers yeast or 30g dried yeast
- 1050g water
- 100g Macphie Plant-based White Sauce
- 250g ricotta cheese
- 20g chopped spinach
- 1g dried oregano
- Salt (to taste)

Method Makes 12 swirls
Mix the Macphie Softie®, bread flour, yeast and water together for 10-15 minutes on middle speed in a conventional mixer. The temperature of the dough should be 27°C. Pin out 1kg dough into rectangle approximately 5mm thick
Mix the ricotta cheese, Macphie Plant-based White Sauce, chopped spinach, oregano and salt together
Spread the filling evenly over the dough piece (you could sprinkle more chopped spinach over the filling) then roll as per Swiss roll
Divide the rolled dough into twelve equal pieces. Place upright on parchment paper, evenly spaced, press down gently
Prove at 40°C 85% relative humidity for 45-60 minutes
Egg wash and top with mozzarella before baking
Bake at 215⁰C for 12-15 minutes
