Vegan banana muffins with cinnamon frosting - Macphie


  • 1000g Macphie Vegan Muffin & Cake Mix
  • 170g vegetable oil
  • 300g water
  • 30g vegan suitable glycerine
  • 300g banana
  • 8g bicarbonate of soda
  • 500g Macphie Vegan Vanilla Frosting
  • 1g ground cinnamon
  • Banana chips


Makes 15

  1. Mix the Macphie Vegan Muffin/Cake Mix and liquids on slow speed for 1 minute.
  2. Scrape down then add the fresh banana and bicarbonate of soda.
  3. Mix again on middle speed for 6 minutes.
  4. Deposit batter into desired cakes (120g for muffin cases).
  5. Bake at 180°C (360°F) for 35-40 minutes.
  6. Allow to cool and decorate with Macphie Vegan Vanilla Frosting with added cinnamon.
  7. Serve with a sliced banana chip on top.
