Recipe Wakey Wakey Eggs and Bacy
Ingredients
- 1600g Strong bread flour
- 400g Macphie Premium Doughnut Concentrate
- 80g yeast
- 1000g water
- Eggs
- Glaze
- Fried chicken
- Curry powder
- Turkey bacon
- Macphie Nacho Cheese Sauce
Method
Place the Macphie Premium Doughnut Concentrate, strong bread flour, yeast & water into a machine bowl and mix for 2 minutes on slow speed, and fast speed for a further 6 minutes.
Scale dough at 1500g for 30 pieces on BDM and ball up.
Prove for approximately 35-40 minutes and let skin up before frying at 375°C for 90 seconds each side.
Coat the doughnut with the glaze.
Cook the turkey bacon until crispy.
Crack and scramble the eggs with a pinch of curry powder. Season with salt.
Once the doughnut is fully dried, slice and fill with the curried scrambled egg, crispy turkey bacon and Macphie Nacho Cheese Sauce.
