Recipe Blueberry & cream cheese scrolls

Ingredients
- 200g Macphie Bun Concentrate
- 1000g bread flour
- 50g yeast
- 550g water
- 300g cream cheese
- 45g caster sugar
- 1 lemon zest
- Macphie Cream Cheese Frosting
- Blueberries

Method
Mix the bread flour, Macphie Bun Concentrate, yeast and water in a spiral mixer for 2 minutes on a slow speed and 6 minutes on a fast speed.
Create a spread by mixing the cream cheese with the caster sugar and lemon zest
Pin out the dough into rectangle and spread with the cream cheese mix and sprinkle with fresh blueberries leaving ¼ inch along bottom edge to glaze and seal. Roll up and divide into approximately 15 pieces.
Place on a baking tray, leave enough room for the pieces to expand and fill the tray.
Proof at 35c RH 70% for approximately 45 minutes or leave covered in a warm and humid area until the dough pieces have risen.
Bake at 190°C (400°F) for 18-20 minutes.
When still slightly warm spread with Macphie Cream Cheese Frosting and a sprinkle of fresh blueberries.
