Recipe Mixed berry cheesecakes

Ingredients
- 200g Macphie Plant-based Cream Alternative – whipped weight
- 100g vegan “cream cheese”
- 1 teaspoon vanilla
- ½ lemon zest
- 75g icing sugar
- Macphie fru-ti o.t.t® Mixed Berry dessert topping
- Berries for garnish
- Macphie Sweet Snow®
- Food colouring gel or powder

Method
Beat the vegan cream cheese with the icing sugar, vanilla and lemon zest.
Fold through 200g whipped Macphie Plant-based Cream Alternative.
Place into a lined ring and refrigerate for at least 1 hour, this can also be frozen.
Mix Macphie Sweet Snow® and food colouring gel until the desired colour is achieved for the garnish.
Garnish the plate as desired using Macphie fru-ti o.t.t® Mixed Berry dessert topping and fresh berries.
