Method

  1. Add the bread flour, Macphie Softie®, yeast and water into a mixing bowl with a dough hook or spiral and mix on a medium speed for 10-15 minutes, until the dough has reached 27°C.

  2. Form into 60g balls and place onto a lightly floured baking tray to prove.

  3. Prove the bread at 40°C/85% relative humidity for 40-45 minutes.

  4. Pre heat your oven to 230°C.

  5. Spray with Macphie GlenGlaze® and bake for 10-15 minutes.  For the final 5 minutes, grate gruyere cheese over the top.

  6. Allow to cool, once cooled, slice and fill with cooked turkey breast, Macphie Cheddar Cheese Sauce and crispy bacon.
