Recipe Yule log

Ingredients
- 500g Macphie Lemon Sensation®
- 175g water
- 125g vegetable oil
- 1 litre Macphie Mactop® Traditional
- 75ml Limoncello

Method
Place Macphie Lemon Sensation® into a bowl with water & oil and mix on slow speed for 1 minute, scrape down the bowl. Mix for 6 minutes on medium speed.
Pour mixture into a lines baking tin and bake at 180°C for 40 minutes.
Allow to cool before trimming the sides then cutting in half.
Whip the Macphie Mactop® Traditional in a bowl to a stiff full whip.
Place 1/3 of the mix in a bowl with the limoncello and whisky until fully combined.
Spread the lemon mixture over one side of the sponge and place the other sponge on top.
Trim the cake to a log shape if desired.
Cover in the remaining mix and garnish with meringue shards and candied lemon.
