Method

  1. Place  Macphie Lemon Sensation® into a bowl with water & oil and mix on slow speed for 1 minute, scrape down the bowl. Mix for 6 minutes on medium speed.

  2. Pour mixture into a lines baking tin and bake at 180°C for 40 minutes.

  3. Allow to cool before trimming the sides then cutting in half.

  4. Whip the Macphie Mactop® Traditional in a bowl to a stiff full whip.

  5. Place 1/3 of the mix in a bowl with the limoncello and whisky until fully combined.

  6. Spread the lemon mixture over one side of the sponge and place the other sponge on top.

  7. Trim the cake to a log shape if desired.

  8. Cover in the remaining mix and garnish with meringue shards and candied lemon.
