Cookie pie cheesecakes



  1. 1.Place the Macphie Soft & Chewy Cookie Mix and chocolate chip pieces (20% of mix weight) into a machine bowl fitted with a paddle. Add water and mix on slow speed until a dough is formed. Repeat for Macphie Soft & Chewy Chocolate Cookie Mix.

  2. 1.In a spring form cake tin, line the bottom and sides with the chocolate cookie mix and chill.

  3. 1.In a food processer, mix the cream cheese, Macphie Mactop® Traditional, cornflour and eggs until full smooth and combined.

  4. 1.Pour the cheesecake mix into the lined cookie moulds and push in the Speculoos filled cookies.

  5. 1.Top the pie with the rolled Macphie Soft & Chewy Cookie Mix and seal the sides by crimping.

  6. 1.Cook at 150°C  for 45 minutes or until the centre has reached 80°C.
