Method Makes 8 portions

  1. Place the Macphie Mississippi Chocolate Muffin & Cake Mix into a mixing bowl fitted with a paddle and beat on slow speed, gradually add the liquids for 1 minute, scrape down.  Mix on middle speed for 6 minutes and slow speed for a final minute.  Place into a preheated oven at 180°C and bake for 55-60 minutes.  Leave to cool.

  2. Whip Macphie Mactop® Extra.

  3. Drain the tinned or kirsch cherries and mix with Macphie fru-ti o.t.t® Mixed Berry dessert topping.

  4. Spread one layer of cake with the cherry compote, then Macphie Mactop® Extra.

  5. Place another sponge round on top and pipe Macphie Mactop® Extra around the outside.

  6. Fill the centre with cherry compote.

  7. Decorate with maraschino cherries.
